cheese toast

I’m not sure if I mentioned on here before but I work as a field study intern at a preschool. That’s about all I can say about the internship. For snack one day they had cheese toast. I didn’t really know what cheese toast was but it was so delicious and yet so simple! It was amazing by the way. I could tell it was one of the popular snacks because kids wanted seconds and almost all of them wanted snack that day.
Here’s the recipe..
Cheese Toast
1 package of english muffins (or however many you’d like)
slices of cheddar cheese
paprika (optional)
slices of ham (optional)

1. Preheat oven to 350 degrees.
2. Cut english muffins in half and lay them on a baking sheet like a hamburger half.
3. Top each half with a slice of cheese or more if you’d like.
4. You can either top it with a little pinch of paprika or a slice of ham.
5. Bake on 350 degrees for about 5 minutes. Ideally, the time varies depending on your oven and it’s condition. You want the muffin to be crispy and the cheese to melt. Be sure to watch it carefully because the cheese could burn easily! 🙂

This recipe is so genius! I witnessed all the kids gobbling it up so if you’ve got a preschooler, this is a great snack unless they’re lactose intolerant. Here are some other foods I’ve been munching on.
This is the southwest chicken pasta salad from Fresh & Easy. I usually make my own lunch but occasionally I won’t have time and I’ll just grab something on campus. I grabbed this as lunch but decided to save it for lunch during my internship. I LOVE this pasta salad. The flavor really comes out in the pasta! 🙂 I think I’ll be purchasing the pasta salad instead of the actual salad. I love my carbs.
This is the beef stew noodle soup from Cha For Tea (a tea house across from campus). They’re usually known of their drinks and boba but the beef stew noodle soup is one of my favorites! It has egg noodles, beef stew, carrots, cabbage, and green onions. It’s sooooo good!!’s weather is a major bummer. I thought it would be sunny but it was cloudy and then when I went grocery shopping it started sprinkling. I just have the worst luck with rain. I was wearing a t-shirt..with no jacket or sweater. I pretty much panicked and hoped that the sprinkling would not lead to rain and that it would go away by the time I was done grocery shopping. The weather did not oblige to my request. It sprinkled harder as I was leaving Cha which was horrible for my contacts because it was sprinkling and it was windy. A recipe for disaster and blood shot eyes. garlic chicken marinara pasta

This recipe is very similar to the Pioneer Womans. Hers has onions instead of garlic among other ingredients but I improvised because I didn’t have any onions on hand. To my surprise, the sauce was quite delicious after being cooked with the chicken.

Here’s the recipe..
Garlic Chicken Marinara Pasta (adapted from the PW)
1 package penne pasta cooked according to box instructions
1 16 oz jar of Ragu mushroom & garlic marinara sauce
4 pieces of chicken thighs
3 cloves of garlic minced
oil for sauteing garlic
salt & pepper to taste

1. Cook pasta according to box instructions and set aside.
2. Pour a little oil in a frying pan and saute the garlic. I actually did it until it was somewhat brown which brought out a lot of flavor in the sauce.
3. Salt and pepper the chicken thighs and sear them in the frying pan.
4. After the chicken thighs are seared, add in the marinara sauce.
5. Cook covered on medium heat for about 15-20 minutes.
6. Plate your pasta and put a piece of chicken on top and add sauce. I served mine with mashed potatoes 🙂

Hope you enjoy it. I usually don’t make chicken with marinara sauce but it was quite tasty. I think the garlic and the chicken juices really bring out the flavor in the sauce. I’ve had the same kind of sauce with spaghetti and it didn’t taste as flavorful. Thanks for reading.

the dark shade

Sorry to disappoint those who are looking for recipes. I’ve decided to do another post on my good shops. I fit the typical profile of a Southern California girl and her love of shopping to a tee. Spring is here and the weather is all over the place. Some days it’s super hot and it’s perfect beach weather and other days it’s raining like today. Regardless of the weather changes, I did some shopping. I previously blogged about my purchase of a Melie Bianco bag. I LOVE it btw. This is the perfect bag for school and for outtings. I’d have to say it’s more day time than a night on the town but to each her own. I’ve never actually followed the rules anyway.
I love black. I think I’ve bought into the concept that black not only makes you slimmer but brings out my skin. Haha, I’m pale as heck so the only color that doesn’t look too weird on me would be black. I think 85% of my closet is black..and the other 15% is very colorful. I’m talkin rainbow colorful. I was cleaning out my closet at school and I planned on bringing home the clothes that didn’t fit..found a pair of hot pink skinny jeans. I don’t remember buying them at all. Usually I’m pretty good with remembering what I bought and where I bought it but I don’t even recognize the brand on the jeans.
I made another trip to the Westfield Santa Anita and got this baby. I previously bought a gold dress from H&M to serve as my graduation dress but I couldn’t find any shoes to match. Even my simple black pumps were too plain for the dress. I bought this one because it’s more graduation-ish. The other one is more of a party/day dress. I got this at Windsor. It was a hard find too. A lot of the dresses were for prom so I had to keep looking if I wanted a grad dress. Some of the prom bombs were pretty a variety of different colors.
I got this basic tee at H&M because I like big t-shirts but fashionable ones.
I have interviews and internships coming up so I bought a black blazer from H&M. I now own three blazers. Surprisingly I always thought I would have more of them.
I got these cute shades at H&M. I hate shopping for sunglasses. I don’t have a nose bridge. Or at least not one that’s visible. It’s really difficult to buy sunglasses that will fit and not fall down to my nose. These were perf.
I love shiny things. This gold knuckle ring is awesome. I love it! I also bought this at H&M.
I love this scarf! The colors and designs are gorgeous. I bought this lovely at Windsor. It’s perfect for those unexpected weather changes.
I bought this lace shirt at Windsor. I don’t know what it is with lace that fascinates me. I love the lacey prints that stores have now. It’s super trendy. I also saw some dresses that were lacey and they were super cute. Too bad it was more party than graduation or I would have bought them!
I bought this basic knit at H&M. I’m currently obsessed with over-sized fashionable t-shirts and sweaters. I just hope I don’t wear the heck out of it.
This is probably the weirdest picture you’ve seen on here so far. But I really did need sheer tights. I have black ones but they just look awkward with my outfits when I wear them under skirts or dresses. I think black tights and over-sized t-shirts or knits are okay but not skirts. There’s just too much dark color that makes the outfit look weird. I’m weird, I don’t deny it. BUT I don’t like my outfits to look weird. That’s just not cooool. I hope I didn’t convince anyone to go shopping right now. There are still a lot of spring sales, just in case anyone’s wondering. Thanks for reading 🙂

my good shops

I have a page devoted to my shopaholic ways but somehow when I read through all my blog post, I have only a hand full of actual blog posts about my good shops. So I decided to cease the food for this post and start the shop. I recently ordered this super fab Melie Bianco bag on Piper Lime. It’s the perfect bag for school and it literally goes with everything because it’s black. I’ll definitely be posting pictures when I get it. Spring quarter is here, which means summer is coming! I can’t wait because I’ll be a UCI graduate! 🙂 It’s funny how time flies in the end. Anyway, to kick off the spring quarter, I decided I needed another pair of flip flops in addition to the Havianas that I bought last time. My friend was telling me about these Tory Burch flip flops and how they’re super comfy so I decided to give it a whirl. I don’t really know what my obsession with black is but I love it. Surprisingly I don’t do the whole goth look. Many people have told me I could pull it off though..mainly because I’m so darn pale. My skin really just doesn’t like sunlight.
I love them! They’re super cute and they came in this awesome box. I love Tory Burch. Enough said.

Here’s the Invicta watch I got via Haute Look. You can’t really tell because I take such crappy pictures BUT this baby is all bling. Haha, the circle around the watch really is covered in bling. Did I mention how much I love shiny things?
Speaking of shiny are some of the rings in my ring collection. I reiterate some because I have a lot. I bought all except the bottom two gold ones at Forever 21. The bottom gold ones came from the Lauren Conrad Collection at Kohls. I love her jewelry!

I have a question. Should I have another giveaway for this Guess purse that has been in my closet since I have no idea how long? Or should I find a charitable cause to donate to? I don’t know of any purse charities. If anyone could be so kind to point me in the right direction I’d appreciate it. It’s in a Ivory Cream color if you can’t tell by the picture. I’ve only used it about a hand full of times and I got it so long ago that I can’t remember when I got it. Let me know in the comments section! Thanks 🙂

bruxie’s gourmet waffles

Yesterday I went shooting at the Orange County Indoor Shooting Range with my big brother and my old roommate who was visiting. After the range, we got lunch at a waffle place in Downtown Brea called Bruxie’s Gourmet Waffles. I shocked my old roommate by getting a savory waffle sandwich instead of a sweet one. Believe me, I was tempted.

I ordered a smoked salmon with cucumbers, dill, and cream cheese. Everything was great except they put a little too much cream cheese and the last few bites were full of cream cheese which made me want to gag.
My brother got the chicken and waffle without the slaw. Apparently they put honey on it too. He said it was good.
Joyce got the prosciutto with gruyere
We all washed it down with strawberry lemonade. It was delish! Especially since it was a hot day outside.
