vanilla pudding chocolate chip cookies

These are so good!!! I advise using mini semi-sweet chocolate chips. Somehow, there’s more dough and it’s the perfect sweetness.

Vanilla Pudding Chocolate Chip Cookies W/Caramel Filling (adapted from Two Peas And Their Pod)
2 sticks unsalted butter
3/4 cup brown sugar
1/4 cup regular sugar
3.4 oz. box of instant vanilla pudding mix
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
1 12oz. bag of mini semi-sweet chocolate chips
8 pieces of caramel cut into four small pieces (32 total)

– preheat oven to 350 degrees
– using a stand mixer, mix butter and sugars until fluffy
– add eggs one at a time, mixing after each addition
– pour in the vanilla extract
– mix the baking soda with the hot water until the baking soda dissolves and add that to the mixer
– add the pudding mix and salt
– add in the flour
– pour in the bag of chocolate chips and mix thoroughly
– using an ice cream scoop (I used the 2 tablespoons one), scoop some dough and roll it into a golf ball than flatten it slightly
– place a piece of caramel in the middle and mold into a golf ball again (make sure your dough is even on all sides! if not the caramel will sink to the bottom)
– place the dough on a silpat or parchment paper lined baking sheet and bake for about 10-15 minutes or until set
– cool on cookie rack before eating ๐Ÿ™‚ you can skip this part if you like

These cookies are! I’m a chocolate chip cookie fanatic so I know my chocolate chip cookies. The vanilla pudding gives it a nice consistency and also lots of flavor. I just made these and I couldn’t help myself from stealing a few. They’re delicious. They would go great with a glass of milk, coffee, or hot chocolate.
