Another year older

So apparently the new wave of the flu is going around. First it was the dry lung cough and now it’s the wet throaty cough. I’m not sure which one grosses me out more. At work the people who were sick last week are getting better and now there’s a new wave of sick people. There’s also a new wave of sick kids. Kids never take you seriously when you tell them to cover their mouth if they cough. I was forced to Lysol myself because this kid coughed on me..seriously right?! EW! I have a pretty weak immune system and I’m generally the first one to get sick. I’ve been drinking like Vitamin C dietary supplement as a means to stay healthy. WHY CAN’T KIDS JUST COVER THEIR MOUTHS?!

Anyway, my birthday is this Saturday and I’ll be turning 24. I was having a conversation with my coworker about getting older and I told her that after 21 it kind of goes down hill from there. She laughed at me and told me that after 21 I should just be glad my bones are all intact. She’s in her mid fifties so I guess she knows what she’s talking about? I remember I couldn’t wait to turn 18 because that meant I was a legal adult. When I was 18 I couldn’t wait to turn 21 because that meant I could drink and buy alcohol legally. I’ve never really celebrated my birthday all that much after I turned 21 because I felt like the rest of the years aren’t really that big of a milestone. Am I wrong? I mean I know people will remember what age they were when they got married or when they have kids but I was excited about being legal and buying alcohol which technically isn’t even on the same playing field. People go to Vegas and all that jazz but I save my money for a spa day if time permits and a quiet dinner at home with family. I’ve never been much of a party person. I guess you could stay I’m a grandma at heart. Eh..it doesn’t really bother me lol

If you have kids, please tell them to cover their mouths when they cough. Also make sure they wash their hands and use hand sanitizer because chances are the other kids at school don’t cover their mouths when they cough. Some people think I’m exaggerating but until you work at a school, you don’t know how many kids really just don’t give a hoot. Sorry I haven’t had time to post anything food related. I spent my MLKJR weekend sleeping and getting adequate rest so I wouldn’t catch the flu. Right now work has me pretty exhausted so hopefully I get something posted soon. I’m usually too tired to blog. Stay healthy!

fighting the flu

WHY is everyone sick?! Going to work has been a sick fest. Everyone is sick..all the students are coughing up lungs or sniffling away. Some of the staff are also sniffling and coughing. I’ve been trying so hard to fight it for the past week. I’m afraid it’s going to catch up with me. Fingers crossed I don’t jinx myself.

I haven’t done much cooking lately. I’ve been busy with work and trying to get some sleep due to waking up early for week. I’m also busy trying to not get sick. Wish me luck! 🙂

frito pie

Ever since I saw the recipe on Unorthodox Epicure, I’ve been drooling. I think I have a calling for Southern cuisine. I’ve decided to retire in the South! Haha 🙂 No seriously, I love Southern food. I think the only thing I don’t like is pecan pie. I love pecans and I love pie but I’m not a fan of pecan pie. Pumpkin pie is awesome 🙂 This recipe is extremely easy and takes only a few minutes if you have all the ingredients. Yes I know it doesn’t have a “crust.” Personally, I could care less what it’s called as long as it taste good. When I mentioned it to my sister, her inner yankee came out and she asked me how it was a pie if it didn’t have a crust…really?! -_-

Frito Pie (Adam Holland)
frito corn chips
chili (I used canned chili because I’m wayyy too lazy to make my own)
shredded sharp cheddar cheese

– heat the chili (make sure it’s hot not warm..if it’s warm the cheese won’t melt!)
– in a medium bowl, layer it with corn chips
– sprinkle some cheese on top
– pour the chili on top of the cheese

It’s really that simple! My picture’s blurry because I was hungry 😛 It taste amazing. It’s definitely pure comfort food. You could eat it as a meal or as a snack. It works with homemade or canned chili. If you want to make your own chili than by all means make it. I’ve never made chili from scratch so I went with the canned kind. Enjoy!

lemonade with raspberries

My lemon tree is lookin gorgeous! My sisters birthday was yesterday and we threw her a huge party. I’m still recovering from the food coma I was in last night. After lots of delicious food, beer, and cake, we called it a night. I helped my mommy pick lemons from the lemon tree in our backyard because all our relatives wanted lemons. I’ve never seen them cook with lemons but I suppose they have other ideas for them. I was craving lemonade so I decided to make myself a huge pitcher 🙂

Lemonade with Raspberries
2 cups lemon juice
1 1/2 cups white sugar
6 cups room temp water
1 1/2 cup warm water
raspberries for garnish or strawberry puree (optional)

– Pour sugar in a big pitcher and add the warm or hot water. I like to use 1 cup warm and 1/2 hot but that’s just my personal preference. I wouldn’t use 1 cup hot water because you might scorch the water and the lemonade will taste kind of funny. Make sure the sugar is dissolved before adding the lemon juice.
– Add lemon juice and stir to mix it completely.
– Pour in 6 cups of water and stir again. You could drink it like this or add raspberries for garnishing. If you like strawberry lemonade, you could puree 3/4-1 cup of strawberries and pour it into the lemonade after you mix the 6 cups of water.

I personally like my lemonade a bit tart as opposed to sweet. I generally add more lemon juice but you could adjust according to your taste preference. I love this with strawberry puree because it makes the best darn strawberry lemonade. I didn’t have strawberries on hand so I opted for raspberries. I suppose you could puree the raspberries if you like…I’m not a fan of raspberry lemonade so I don’t go that route. Enjoy! 🙂
