finally back!

I’m finally back! Sorry for the lack of posts. I’ve been super busy with work and usually when I get home, I hit the pillow. My school is officially on spring break so I’ll have more time to post! So far I’m planning on going to the shooting range, Palm Springs, and maybe Tanaka Farms for strawberry picking. Work has been pretty killer so I’m going to enjoy the next week off. I’m in dire need of spa time. Does anyone have any recipes for cheesecake?? 🙂 A coworker of mine loves cheesecake and her birthday is coming up in April. She’s helped me a great deal with working at my school so I wanted to make her something good. Most of the cheesecake recipes I’ve tried are hit or miss.

I hope everyone enjoys their Easter if they celebrate it. The kids I work with were asking me what I was going to make since it’s Easter tomorrow. When I told them I wasn’t going to make anything they looked so disappointed. Those little suckers are spoiled rotten. According to them, I bring in goodies for every holiday so Easter should be no different. I must be out of it because they had to explain it to quite sad 😦 I don’t even remember what I brought if I brought anything. Anyway, they plagued me with guilt since everyone knows I’m a baker so I made them Easter goody bags. I didn’t have the funds to buy ingredients to bake so I bought two bags of Takis, two bags of Cheetos, and some gold fish and put them in Easter bags. I’m not in middle school so someone please explain this to me. Are Takis the new Cheetos or something? All the kids at my school LOVE Takis. I didn’t even know what they were when I first started working there. The only place I have seen them is the gas station. Hot Cheetos > Takis any day! 🙂 The kids loved them because they had Takis in them..spoiled rotten I tell you.

I guess I spoil my coworkers too because I bought a box of brownies at Albertsons and I offered one to my coworker. She asked me if I made them and when I said no, she goes no thank you. I think that’s a sign that they’re spoiled by my homemade baked goodies. I give them to people to lure them in and make them my guinea pigs. I accept criticism for my baking lol If it doesn’t taste good, I don’t get offended. I’ve made a bunch of different kinds of cookies and they seem to enjoy them. They nicknamed me the cookie monster. Powdered Sugar Bite Size Chocolate Brownies

For most of my readers who have been following from the beginning, you guys know I can’t make brownies. Apparently I can’t use a mixer to make brownie batter but it comes out perfect if I whisk it by hand. Can you tell how much that irritates me? Mostly because I’m a lazy nut and I like to take short cuts. A while ago I was reading up on The Adventures of Our Army Life with Jen and I saw a brownie recipe that looked awesome. I’m a fan of dark chocolate fudge and chocolate brownies. Somehow, those taste the best. Sorry there’s no picture. I literally ate ten of them and gave them away before I realized I forgot to take a picture.

Powdered Sugar Bite Size Chocolate Brownies (Jen Smith)
2 1oz. squares of dark chocolate (I used the Sweet Factory kind)
1/4 cup butter
1 cup sugar
2 beaten eggs
1 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
1/4 cup mini chocolate chips
1 cup powdered sugar

– preheat oven to 350 degrees
– in a small bowl, melt chocolate and butter together in the microwave in 30 sec intervals. stir after each 30 secs
– stir in remaining ingredients and mix thoroughly. sift the dry ingredients if you like…I don’t bother with it 🙂
– pour batter into a 8×8 in. buttered pan
– bake for 30 minutes or until done
– cool for 10-15 minutes
– cut into bite size pieces and roll in powdered sugar

These are delicious! These brownies are probably one of the best I’ve made from scratch. It’s very melt in your mouth and the powdered sugar sends them over the top. I made them for one of my coworkers for her birthday and she loved them. Definitely give these a try 🙂
