spicy bbq pork sandwich

There is my awesome spicy pork sandwich! 🙂 I saw a recipe on the PW website for spicy pulled pork and that sounded really amazing. I didn’t have the time or patience to actually bake it for 6 or more hours so I made spicy pork sandwiches instead! 🙂

Spicy BBQ Pork Sandwich

1 roll french or sourdough bread, sliced into sandwich pieces
2 pork sirloin tip roast (about 6lbs total)
1 onion, cut and peeled
1 7.5oz can of chipotle peppers in adobo sauce
2 1/2 cups of dr pepper
salt and pepper to taste
1/2 stick of butter
bbq sauce

– preheat oven to 325 degrees
– place onions in pan and place the two pork roast on top of the onions
– season pork roast with salt and pepper
– pour chipotle peppers over both roast
– pour dr pepper on top of chipotle peppers
– bake at 325 degrees for about 2 1/2-3 hours or until the inside reads a temperature of 160 degrees
– let pork cool for about 20 minutes and slice
– in a medium frying pan, melt some butter
– add in the bread and make sure it gets a nice golden layer on each side
– spread a good amount of bbq sauce on the bread and add as many slices of pork as you’d like
– put it together and you have a spicy bbq pork sandwich!

It’s freaking amazing with french bread. The bbq sauce really brings out the flavor. And served with a side of potato salad is just too darn awesome. It’s sooooo good! A must try 🙂
